Start by bringing the milk to a boil in a large saucepan. Once it reaches a boil, remove it from the heat and add the vanilla sugar and mint syrup, stirring well to blend the flavors.
In a separate bowl, work the egg yolks with the sugar using an electric or manual whisk until you obtain a clear and frothy mixture.
Gently incorporate the flour into the egg mixture, then gradually add the flavored milk, continuing to stir to avoid lumps from forming.
Transfer everything back to the saucepan and cook over medium-low heat, stirring constantly until the cream thickens to the desired consistency.
Pour the cream into individual cups and let it cool slightly before placing them in the refrigerator for at least an hour.
