  • Drain the artichokes and let them cool on a serving plate.
  • Meanwhile, finely chop the yellow peppers and some fresh parsley.
  • Season the pepper mixture with extra virgin olive oil, salt, and pepper to your personal taste.
  • Carefully fill the artichokes with the pepper mixture, being careful not to break them.
  • Drizzle the stuffed artichokes with the juice of the second lemon, adjust with salt and pepper if necessary.
  • Serve immediately or store in the refrigerator until ready to serve.

Notes

To give a special twist to the recipe, you can add toasted pine nuts to the filling for a surprising crunch, or garnish each artichoke with a thin slice of pecorino romano before serving, for a savory contrast that will enhance the sweetness of the yellow peppers.
