Recipe for Catalan Style Onion Flan with Pecorino

  • Start by preheating the oven to 200°C.
  • Take a non-stick pan and melt the butter over medium heat.
  • Meanwhile, peel the onions and cut them into julienne (thin strips).
  • Add the onions to the pan with the melted butter and let them sauté lightly.
  • Pour the two ladles of hot broth over the onions, stir, and cover with a lid. Let it braise for about 15 minutes, checking occasionally.
  • When the onions are soft and translucent, incorporate plenty of grated pecorino cheese according to your taste.
  • Transfer the mixture to a baking dish, level it well, and bake.
  • Gratinate in the hot oven until a golden and gratinated crust has formed on the surface.

Notes

To add a unique touch to our pudding, I recommend incorporating fresh aromatic herbs such as thyme or rosemary during the braising of the onions for a more intense aroma that pairs perfectly with the pecorino.
