  • Separate the egg whites from the yolks.
  • Prepare a double boiler and bring the water to a boil.
  • In a heatproof bowl, combine the egg whites, sugar, and a pinch of salt.
  • Continuously mix until the sugar has completely dissolved.
  • Remove the bowl from the double boiler and fold in the grated coconut, stirring until a homogeneous mixture is formed.
  • Line a baking tray with parchment paper and lightly grease it with olive oil.
  • Using two teaspoons, shape small amounts of the mixture onto the tray, leaving space between each delight.
  • Bake the delights at 180 degrees Celsius until golden, for about 10-15 minutes.
  • Allow the delights to cool before serving.

Notes

To add an exotic touch to your Coconut Delights, dip half of the delight in melted dark chocolate after they have cooled and let them solidify on a rack or parchment paper. The contrast between the tropical flavor of the coconut and the intensity of the chocolate will make these delights irresistible!
