Recipe for Gnocchi Dell'orto with Fresh Vegetables

Start by peeling and finely slicing the onion. Sauté the onion in a saucepan with olive oil for about 2-3 minutes, until it becomes transparent and slightly golden.
Meanwhile, clean and wash the other vegetables (zucchini, carrot, and celery). Then, dice them into small cubes for even cooking.
Add the diced vegetables to the pan with the sautéed onion along with the sprig of rosemary, which will release its aroma during cooking.
Let it all cook over high heat for about ten minutes, stirring often to prevent the vegetables from sticking to the bottom of the pan.
Season with salt and pepper to taste, then add the tomato pulp to the sautéed vegetables.
Cover the saucepan and let it cook for another 10 minutes over low heat, so that the flavors blend well.
While the sauce is cooking, bring a pot of salted water to a boil and cook the gnocchi according to the package instructions or until they float to the surface.
Drain the gnocchi with a slotted spoon and transfer them directly to the vegetable sauce (remember to remove the sprig of rosemary).
Gently mix the gnocchi with the sauce to allow them to flavor well.
Serve the gnocchi hot, generously sprinkled with grated grana cheese.
Notes
For a unique twist, add roughly chopped toasted almonds over the gnocchi before serving; this will add crunchiness to the dish and enhance the flavors of the garden vegetables.
