Recipe for Gnocchi Dell'orto with Fresh Vegetables

  • Start by peeling and finely slicing the onion. Sauté the onion in a saucepan with olive oil for about 2-3 minutes, until it becomes transparent and slightly golden.
  • Meanwhile, clean and wash the other vegetables (zucchini, carrot, and celery). Then, dice them into small cubes for even cooking.
  • Add the diced vegetables to the pan with the sautéed onion along with the sprig of rosemary, which will release its aroma during cooking.
  • Let it all cook over high heat for about ten minutes, stirring often to prevent the vegetables from sticking to the bottom of the pan.
  • Season with salt and pepper to taste, then add the tomato pulp to the sautéed vegetables.
  • Cover the saucepan and let it cook for another 10 minutes over low heat, so that the flavors blend well.
  • While the sauce is cooking, bring a pot of salted water to a boil and cook the gnocchi according to the package instructions or until they float to the surface.
  • Drain the gnocchi with a slotted spoon and transfer them directly to the vegetable sauce (remember to remove the sprig of rosemary).
  • Gently mix the gnocchi with the sauce to allow them to flavor well.
  • Serve the gnocchi hot, generously sprinkled with grated grana cheese.

Notes

For a unique twist, add roughly chopped toasted almonds over the gnocchi before serving; this will add crunchiness to the dish and enhance the flavors of the garden vegetables.
