Prepare traditional crunchy and sweet amaretti cookies with almonds, sugar, and egg whites. Add a touch of originality by inserting a chocolate heart or flavoring with vanilla or grated orange zest. Serve them with coffee or as an afternoon tea treat.
Start by finely grinding the almonds in a food processor with some of the sugar. To obtain a fine almond flour, sift the mixture and repeat the process if necessary.
Combine the rest of the sugar with the almond flour and mix well.
Whip the egg whites to stiff peaks with a pinch of salt and gently fold them into the almond and sugar mixture, being careful not to deflate them.
Form balls with a diameter of 4-5 centimeters from the obtained mixture.
Roll the balls in a mixture of flour and sugar, then place them on a baking sheet lined with parchment paper.
Bake in a preheated oven at 180 degrees for about 15 minutes or until the amaretti are lightly golden.
Notes
To add an original touch to the recipe, you can insert a soft dark chocolate heart inside the balls before baking or flavor the dough with a few drops of natural vanilla extract or grated orange zest for an even more intense flavor.
