Beef with olives is a traditional Italian dish, perfect for special occasions or as Sunday comfort food. The beef is browned and then cooked with green olives after removing some of their saltiness. For an extra touch, add fresh rosemary and deglaze with robust red wine.

  • Start by placing the green olives in a pot with boiling water and let them cook for 7 minutes to remove some of their saltiness.
  • Meanwhile, in a large skillet, melt a knob of butter with a drizzle of oil over medium heat. This combination will help prevent the butter from burning and will give more flavor to the beef.
  • Once the butter is completely melted, gently place the piece of beef in the skillet and let it brown for about 15 minutes, turning it on all sides for even cooking.
  • Season the beef with salt and pepper to taste, then add the olives drained from the water.
  • Let it all cook for another 15 minutes, turning the beef occasionally so that it flavors well with the olives.

Notes

For an original touch and an even richer flavor, add a sprig of fresh rosemary during the beef cooking and deglaze with a glass of robust red wine before adding the olives. The wine will further tenderize the beef and enrich the dish with deep aromatic notes.
