Recipe for Hard-Boiled Eggs with Yogurt and Spices

  • Allow the hard-boiled eggs to cool, then cut them in half and carefully remove the yolks.
  • In a bowl, mash the yolks with half of the paprika, half of the lemon juice, a tablespoon of chopped mint, salt, and pepper until obtaining a homogeneous mixture.
  • Fill the egg whites cavities with the spicy yolk mixture.
  • Prepare the sauce by mixing the yogurt with the remaining paprika, lemon juice, chopped mint, finely crushed garlic, salt, and pepper to taste.
  • Pour the sauce over the stuffed eggs and let it rest for a few minutes before serving to intensify the flavors.

Notes

To add a crispy touch to the recipe, garnish each egg with a sprinkle of toasted hazelnut crumbs or black sesame seeds before serving. This will not only add a pleasant texture but also a nutty flavor that pairs perfectly with the freshness of yogurt and herbs.
