  • Start by finely chopping the pistachios using a blender, then transfer them to a bowl.
  • Melt the butter in a large, preferably non-stick, pan.
  • Add the speck to the pan and sauté it for a few minutes.
  • Incorporate the mascarpone and a pinch of salt, then continue cooking over low heat, stirring gently.
  • Meanwhile, cook the farfalloni in plenty of salted water following the times indicated on the package for an al dente texture.
  • Drain the pasta and transfer it to the pan with the sauce.
  • Add the chopped pistachios to the pasta and quickly mix all the ingredients together.

Notes

For an extra crunchy and flavorful touch, lightly toast the pistachios in a pan before chopping them. Also, sprinkle some freshly ground black pepper on the pasta before serving to further enhance the flavors of the dish.
