  • In a large bowl, pour the chestnut flour and add an egg together with a quarter of the milk, stirring until a homogeneous mixture is obtained.
  • Heat a non-stick pan and lightly grease it with olive oil. Pour a ladle of the prepared batter and cook for a few minutes until the crepe becomes golden and thin. Carefully flip it to cook on the other side.
  • Repeat the process until the batter is used up, stacking the crepes on a plate.
  • Bring the remaining milk to a boil in a saucepan.
  • In another saucepan, whisk two egg yolks with the sugar until a light and frothy cream is obtained. Incorporate the sifted all-purpose flour and mix well.
  • Gradually add the hot milk to the yolk mixture, continuing to stir to avoid lumps.
  • Return the saucepan to the heat and bring the custard to a boil, stirring constantly, until it thickens.
  • Once the custard has cooled, spread it on the open crepes.
  • Fold each crepe into a triangle and serve with a scoop of vanilla ice cream.

Notes

To give a special touch to your crepes, add a hint of cinnamon or vanilla to the batter to enrich the flavor of the chestnuts. Decorate the crepes with dark chocolate shavings before serving for a crunchy contrast that will surprise your guests.
