Recipe for Cuttlefish in Green Sauce: Taste of the Sea
Squid in green sauce is a delicious and light recipe, enriched with a fragrant green sauce. Tender squid are cooked in an aromatic broth and then dressed with a sauce made of olive oil, garlic, parsley, basil, and lemon juice. A crunchy touch of toasted breadcrumbs with lemon zest completes this dish with a taste of the sea.
In a large pot, bring water to a boil with roughly chopped celery and carrot, plenty of fresh parsley, white wine vinegar, salt, and whole peppercorns to create an aromatic broth.
Immerse the frozen cuttlefish in the boiling broth and let them cook for about 10 minutes or until they become tender.
Once cooked, drain them and cut them into thin strips to enhance their flavor and texture.
For the green sauce: heat the olive oil in a pan with a crushed garlic clove to infuse it with its aroma without overpowering the other ingredients.
Quickly mix the sauce ingredients, removing from heat before the herbs lose their vibrant color, and combine them with the previously cut cuttlefish.
Notes
To add a crispy touch to the cuttlefish in green sauce recipe, add some toasted breadcrumbs with a drizzle of extra virgin olive oil and a final sprinkle of grated organic lemon zest to intensify the citrusy aroma of the dish.
