Recipe for sweet and sour sauce with dried apricots, a perfect condiment for Asian dishes, aged cheeses, or grilled white meats. Easy to make, just rehydrate the apricots, cook them with sugar, and blend with apple cider vinegar. Add a pinch of chili powder for a spicy twist.
Start by soaking the dried apricots in lukewarm water for about two hours, until they rehydrate and become soft.
Transfer the rehydrated apricots to a small saucepan, add water to just cover them, and incorporate the sugar.
Turn on the heat to low flame and let the apricots cook for about 30 minutes, until they become extremely tender and begin to fall apart.
Once cooked, turn off the heat and let the apricots cool for a few minutes.
Drain them from the cooking water and transfer them to the glass of a blender. Add the apple cider vinegar (or white wine vinegar for a more pronounced flavor).
Blend until smooth and homogeneous.
Keep the sweet and sour sauce warm, preferably in a bain-marie, until ready to serve.
Notes
For an original twist, add a pinch of chili powder during blending to give the sweet and sour sauce a pleasant spicy contrast that will further enhance the sweet flavor of the apricots.
