  • Start by thoroughly washing the tomatoes and cutting them in half horizontally.
  • Gently remove the seeds and let the tomatoes drain upside down on a grill to remove excess water.
  • Prepare a light marinade with olive oil and salt, then immerse the tomato halves in this mixture, making sure they are well seasoned.
  • Heat the grill until it is hot, then place the tomatoes on it with the cut side down.
  • Let them roast well on one side before gently turning them to cook on the other side until they are golden and slightly caramelized.
  • Once ready, drizzle them again with a little olive oil and a pinch of salt, then serve them hot as a side dish.

Notes

To give an original touch to the recipe, add finely chopped fresh aromatic herbs such as basil or oregano to the olive oil and salt marinade before seasoning the tomatoes. Additionally, you can sprinkle the tomatoes with shavings of Parmigiano Reggiano or Pecorino before the final turn on the grill for a flavorful and gratinated crust.
