Traditional Pork Aspic Recipe

Traditional pork jelly is a unique appetizer or side dish that's perfect for festive meals. Pork meat, trotter, and ear are cooked and served with a flavorful broth made with vinegar and lemon juice.

  • In a large pot, bring plenty of salted water to a boil and immerse the pork meat, trotter, and ear in it.
  • Let it boil for about 3 hours, until the meat is tender and easily comes off the bones.
  • Remove the pork parts from the water and set them aside to cool. Meanwhile, continue boiling the remaining broth.
  • Add a glass of vinegar to the broth and let it reduce over low heat until it reaches about 1/4 of the initial quantity.
  • After the reduction, turn off the heat and let the broth rest overnight at room temperature.
  • The next day, strain the broth to remove any impurities and add lemon juice to taste to balance the flavors.
  • Slice the previously cooked meat into thin slices and arrange them on serving plates.
  • Gently heat the strained broth and pour it over the meat slices already arranged on the plates.
  • Season with freshly ground red pepper according to personal taste.

Notes

For a creative touch, add some aromatic herbs like rosemary or thyme during the broth reduction phase, which will give a unique aroma to the final dish.
