Delicious traditional and crispy salt cod fritters, made with soaked cod, potatoes, eggs, parsley, and garlic. Serve them crispy and golden after a delicate frying in olive oil. An irresistible dish that will win over your guests!
Start by boiling the codfish in water until it is tender. Once cooked, drain it, remove the skin and bones, and finely flake it with a fork in a large bowl.
Boil the potatoes in salted water until tender. Drain, peel, and mash them with a potato masher or fork until smooth.
In a large bowl, combine the mashed potatoes with the flaked codfish. Add the eggs, a very fine mince of parsley and garlic to flavor the mixture.
Mix all the ingredients well until you have a homogeneous dough. Adjust the salt and pepper according to your personal taste.
With damp hands, form the mixture into balls of the desired size and coat them evenly with breadcrumbs.
Heat plenty of olive oil in a pan and, when it reaches the ideal temperature, fry the balls until they are golden and crispy on all sides.
Drain the balls on paper towels to remove excess oil before serving.
