  • Start by boiling the cotechino in hot water. At half cooking time, drain it and carefully remove the skin.
  • Lay the beef slice on a cutting board and flatten it well. Cover it evenly with the slices of prosciutto crudo.
  • Place the peeled cotechino in the center and roll the meat around it, making sure the prosciutto remains inside the roll.
  • Tie the obtained roll with kitchen twine to maintain its shape during cooking.
  • In a large pan, sauté the finely chopped onion and garlic in a little olive oil until translucent.
  • Gently place the roll in the pan, cover it with a mixture of broth and red wine (in equal parts), and cook over moderate heat with the pan covered for about an hour.
  • Once cooked, remove the dressed cotechino from the oven, slice it, and place it on a warm serving dish.
  • Strain the remaining sauce in the pan and pour it over the slices of cotechino before serving.

Notes

To add a creative touch to the traditional recipe of Dressed Cotechino, I suggest adding a pinch of cinnamon and a bay leaf to the sauce during cooking to give the dish a spicy and aromatic note that pairs perfectly with the intense flavors of the meat.
