Recipe for Fish Pirozhki: Slava's Delight in the Kitchen
Fish Pirozhki are delicious bite-sized puff pastry filled with minced fish, onion, and hard-boiled egg, ideal as appetizers or finger food. An original idea to enrich the filling is to add finely chopped chives and grated organic lemon zest. Easy and quick to prepare, perfect for a gourmet appetizer.
In a large pot, bring salted water to a boil and add the carrot, a few bay leaves, and a stalk of celery to flavor the broth.
Immerse the fish fillets in the flavored water and let them boil for about 10 minutes.
Once cooked, drain the fish, removing any skin and bones if present, then pass it through a food processor until it forms a homogeneous mixture.
In a pan, melt the butter and gently sauté the sliced onion until it becomes translucent.
Add the minced fish to the sautéed onion, season with salt and pepper to taste, and add the hard-boiled egg cut into small squares. Mix well to combine the ingredients.
Roll out the puff pastry on a lightly floured surface and cut out an even number of discs using a pastry cutter or an upside-down glass.
Place a portion of the filling in the center of half of the prepared discs, leaving the edges free to seal them later.
Cover each disc with filling with another puff pastry disc and press the edges with your fingers or the tines of a fork to seal them well.
Brush the surface of the pirozhki with the beaten egg yolk for a perfect golden brown color during baking.
Bake the pirozhki on a buttered baking sheet in a preheated oven at 220°C for about 25 minutes or until they are golden and crispy.
