Crispy and Golden Fried Artichokes

  • Start by cleaning the artichokes: remove the toughest outer leaves, cut the tips of the leaves, and divide the artichokes into wedges. Also, cut the stems into small pieces.
  • Thoroughly wash the artichokes and place them in a saucepan with boiling salted water, adding the juice of one lemon. Cook for about 4-5 minutes.
  • Drain the artichokes and transfer them to a bowl. Season with salt, pepper, chopped oregano, and crushed garlic. Drizzle with the juice of the remaining two lemons and mix well. Cover the bowl and let marinate for about two hours.
  • Heat plenty of olive oil in a frying pan suitable for frying.
  • Drain the artichokes from the marinade, coat them in flour, then in the previously beaten egg seasoned with salt and pepper.
  • Fry the artichokes a few at a time until they become golden and crispy.
  • As they are ready, remove them with a slotted spoon and place them on kitchen paper to remove excess oil.
  • Serve the hot artichokes garnished with slices of fresh lemon and sprigs of parsley.

Notes

For a unique twist to the recipe, add a pinch of turmeric or smoked paprika to the egg batter to give your fried artichokes a slightly spicy and exotic flavor that will pleasantly surprise your palate!
