Instructions
Sauté the finely sliced onion in 2 tablespoons of olive oil.
Add the diced pumpkin and potatoes and let them flavor well.
Cover the vegetables with salted boiling water and cook over low heat for about 30 minutes.
Blend everything until smooth and creamy.
Serve the yellow pumpkin cream with a drizzle of raw olive oil and chopped parsley.
Notes
Add a sprinkle of freshly ground black pepper for an extra touch of flavor.
