  • Sauté the finely sliced onion in 2 tablespoons of olive oil.
  • Add the diced pumpkin and potatoes and let them flavor well.
  • Cover the vegetables with salted boiling water and cook over low heat for about 30 minutes.
  • Blend everything until smooth and creamy.
  • Serve the yellow pumpkin cream with a drizzle of raw olive oil and chopped parsley.

Notes

Add a sprinkle of freshly ground black pepper for an extra touch of flavor.
