Instructions
1. Boil the broccoli in salted water for about 10 minutes, until soft. Drain well and let them cool.
2. Once cool, blend the broccoli until smooth.
3. In a bowl, mix the blended broccoli with the egg yolks, breadcrumbs, diced egg whites, salt, and pepper. Mix well until smooth.
4. Take small portions of the mixture and form them into meatballs with your hands. Place them on a plate.
5. Steam the meatballs for about 10 minutes, until well cooked.
6. Meanwhile, in a pan, heat 6 tablespoons of olive oil.
7. Add the crushed garlic cloves and the chopped chili pepper to the pan. Cook for a few minutes, until the garlic is golden.
8. Add the anchovy fillets in oil to the pan and cook until they have melted well.
9. Strain the hot oil from the pan and pour it over the meatballs arranged on the serving plate.
10. Serve the hot broccoli meatballs and enjoy them immediately.
Notes
Add some grated cheese to the meatball mixture for an extra flavor.
