  • Blanch the almonds in a pot of boiling water for a few minutes, drain them and remove the skin, and finally chop them finely.
  • Sift the two qualities of flour onto the pastry board and mix them together. Add the ground almonds, sugar, vanilla, grated zest of one lemon, two egg yolks, butter and lard. Knead the ingredients quickly with your hands, kneading them just long enough to bind them together.
  • Cut out many uniformly sized balls from the dough and arrange them side by side in a buttered and floured 8-inch-diameter baking dish.
  • Bake the cake in the oven at 180° for one hour. After this time has elapsed, remove the cake from the oven, let it cool, then remove it from the pan, trying to crumble it as little as possible, arrange it on a serving plate and serve.

Notes

For an original touch, add dark chocolate chips or almond slivers to the dough for extra crunch. This variation will not only enrich the flavor but also add a nice texture to the cake.
