Bring milk to a boil, add rice and lemon zest. Cook, stirring, until the milk is all used up.
Combine the peeled and chopped almonds, whole eggs 120 g sugar and turn off the heat.
Caramelize the remaining sugar in a baking dish, pour in the rice, level it, and bake at 180 degrees for 25 minutes.
It is eaten cold, in lozenges.
Notes
For an even more aromatic touch, you can add a teaspoon of vanilla extract or a pinch of cinnamon to the mixture. These additional ingredients will take your rice cake to a new level of flavor.
