Traditional Hare with Pine Nuts: A Hearty Recipe

Instructions

  • Shortening: 8 days in the bottom of the refrigerator.
  • Clean the hare, wash it first with water and lemon, then with water and vinegar, and finally cut it into pieces.
  • Sauté the butter in a saucepan with the chopped onion and ham, add the hare, season with salt and pepper, and slowly brown everything.
  • Lower the flame and continue cooking, adding a little broth from time to time.
  • After about an hour and a half of cooking, add sugar dissolved in about half a glass of vinegar, grated chocolate, pine nuts and raisins previously soaked in warm water. Stir well, cover and cook for about a quarter of an hour more.

Notes

To make the dish even richer and tastier, you can add a touch of cinnamon powder or a pinch of nutmeg during the last stage of cooking. These spices will add a unique aromatic note, enhancing the flavors of the hare and pine nuts.
