Quick and Tasty Checca Pasta

Instructions

  • Blanch tomatoes for a few minutes, then peel and seed them.
  • Cut the tomatoes into fillets and place them in a soup bowl.
  • Add the diced mozzarella to the soup bowl.
  • Season with minced garlic, olive oil, plenty of chopped basil and pepper.
  • Cook pasta al dente in plenty of salted water.
  • Pour the pasta into the soup tureen, mix well and let stand for 1 hour before serving.

Notes

For an even lighter and fresher version, you can replace the olive oil with avocado oil, which gives a delicate flavor and creamy texture. Also, for a touch of color and flavor, add some taggiasca olives or capers to the soup bowl before serving.
