Blanch tomatoes for a few minutes, then peel and seed them.
Cut the tomatoes into fillets and place them in a soup bowl.
Add the diced mozzarella to the soup bowl.
Season with minced garlic, olive oil, plenty of chopped basil and pepper.
Cook pasta al dente in plenty of salted water.
Pour the pasta into the soup tureen, mix well and let stand for 1 hour before serving.
Notes
For an even lighter and fresher version, you can replace the olive oil with avocado oil, which gives a delicate flavor and creamy texture. Also, for a touch of color and flavor, add some taggiasca olives or capers to the soup bowl before serving.
