Select hot peppers that are ripe but in perfect condition.
Wash them well, dry them and remove the stalk.
Cut them into slices about half a millimeter thick.
Place them in a glass jar.
Top with excellent extra-virgin olive oil.
Take care that they are covered completely with the oil.
Close the jar tightly and store it in a dry, dark place.
Allow to rest for at least one month.
Serve on pizza, spaghetti or anywhere you want a touch ... spicy.
Notes
For an even more aromatic result, you can add some herbs such as rosemary or thyme along with the chilies. Be sure to use a high-quality olive oil to preserve the intense flavor and quality of your hot oil.
