  • Clean the chanterelle mushrooms, wash them under running water and dry them. If they are large, cut them lengthwise.
  • Transfer the mushrooms to a pan lightly greased with olive oil and cook, stirring with a wooden spoon.
  • Add more oil and butter, allowing to brown.
  • Combine the peeled tomatoes and simmer for one hour.
  • Before serving, season with salt and season with chopped parsley and fresh garlic.

Notes

For an even richer variation, you can add a splash of white wine to the recipe during the browning phase of the mushrooms. This will give the sauce a particularly inviting aroma. In addition, serving chanterelles in gravy with a portion of warm polenta can turn this dish into a comfortable fall meal.
