Quick and Easy Tea Cakes

  • Sift the flour into a well on the table along with the baking powder.
  • Make a hollow in the center and add the sugar, margarine, egg yolks and grated lemon zest.
  • Quickly knead the dough until smooth.
  • Form balls the size of a walnut.
  • Dip the balls into the lightly beaten egg whites.
  • Arrange the balls spaced out on a greased baking sheet.
  • On each ball place 1/2 almond or one candied cherry, pressing it into the center.
  • Bake in a preheated oven at 180 degrees for about 20 minutes, placing the pan at half height.

Notes

For an even more mouthwatering touch, you can dip half of the pastries in melted chocolate once cooled. Not only will this add an extra layer of flavor, but it will also make your pastries even more visually appealing. Remember to allow the chocolate to cool completely before serving.
