Add the eggs, soft butter, powdered sugar, grated lemon zest, salt and baking powder dissolved in a little warm water.
Mix everything well until the mixture is elastic. Add a few drops of milk if needed.
Let the dough rise for about 2 hours, dusting it with flour and covering it with a tea towel.
Form small loaves and fry them in hot oil.
Serve warm, dusted with powdered sugar.
For a mouthwatering variation, fill the Krapfen with Nutella or lemon cream.
Notes
For an original touch, you can add a tablespoon of rum or orange blossom water to the dough to enrich the flavor. If you prefer a lighter version, you can bake the Krapfen in the oven at 180°C for 10-15 minutes, until golden brown.
