  • Chop the mint leaves very finely, collect them in a bowl and mix them with the sugar.
  • Melt the chocolate in a double boiler, remove from heat, let cool and add the two egg yolks, stirring until smooth. Allow to cool.
  • Whip the cream and mix it with the sugar and mint mixture, then with the melted chocolate.
  • Pour everything into a wet mold and keep in the freezer three or four hours.
  • Unmold, decorate with clumps of cream and mint leaves.

Notes

For an even fresher and lighter variation, you can replace the sugar with agave syrup and use dark chocolate with a higher percentage of cocoa. This will not only reduce calories, but also intensify the flavor of the chocolate, creating a more pronounced contrast with the freshness of the mint.
