Instructions
1. Clean and scrape the carrots, then grate them.
2. Put a saucepan on the heat with the carrot pulp, a little water, sugar, lemon juice, and grated lemon zest.
3. Stirring occasionally, cook over moderate heat until the jam reaches the right consistency.
4. Fill the jars while hot, seal tightly, and turn them upside down until completely cooled.
Notes
Add a sprinkle of cinnamon for a touch of warmth.
