  • 1. Clean and scrape the carrots, then grate them.
  • 2. Put a saucepan on the heat with the carrot pulp, a little water, sugar, lemon juice, and grated lemon zest.
  • 3. Stirring occasionally, cook over moderate heat until the jam reaches the right consistency.
  • 4. Fill the jars while hot, seal tightly, and turn them upside down until completely cooled.

Notes

Add a sprinkle of cinnamon for a touch of warmth.
