Kalitsounia Kritis: Easy Cheese Pies

  • Pour the flour into a bowl, add the salt and water, and knead until smooth.
  • On a floured surface, roll out the dough and cut out squares or circles.
  • In another bowl, combine the ricotta, egg and mint. Mix well.
  • In the center of each dough cutout, place a spoonful of ricotta cream.
  • Close the sides of the dough as if it were a panzerotto.
  • With a fork, prick the edges to prevent the mixture from coming out during baking.
  • Heat the oil in a frying pan and fry the cupcakes until golden brown.
  • Once golden brown, remove the cupcakes from the oil, pat dry on paper towels and sprinkle with sugar.

Notes

For a lighter version, you can bake the cupcakes at 180°C for 20 minutes instead of frying them. This will not only reduce calories but also give a different texture, more like a pastry. For a cooler touch, add a pinch of lemon zest to the ricotta cream.
