  • Coarsely chop peeled tomatoes.
  • In a skillet, sauté garlic with 5 tablespoons of oil, then remove.
  • Combine the chopped anchovies and crush them to a paste.
  • Add the sliced olives and let the sauce flavor for 5 minutes.
  • Add the chopped tomatoes, salt them lightly, pepper them, and allow the cooking juices to recede, stirring often.
  • Cook the pasta al dente and toss it with the prepared sauce.

Notes

For an even more flavorful touch, you can add a pinch of dried oregano or chili powder to the sauce. This will further enrich the flavor of the dish. If you prefer a less spicy version, you can use olives stuffed with almonds or cheese.
