  • Place the chicken in a saucepan and cook it with the various seasonings: sage, rosemary, garlic, salt and pepper. When cooked, let it cool very well, then strip it and cut it into slices 2/3 cm long.
  • Place in a bowl and add the chopped pineapple, sliced almonds, thinly sliced celery, curry powder and season with mayonnaise sauce.
  • Garnish with lemon slices interspersed with pineapple and oranges.

Notes

For an even lighter and fresher version, you can replace the mayonnaise with low-fat Greek yogurt seasoned with a little lemon and mustard. This variation not only reduces calories but also adds a touch of acidity that balances the sweetness of the pineapple.
