Frittelle di Riso, also known as Rice Fritters, are a traditional Italian dessert, perfect for the Carnival season. These delicious fritters are made with rice, milk, flour, sugar, butter, eggs, sultanas, and rum. The rice is cooked in milk until all the liquid is absorbed, then left to cool. The beaten eggs, liquor, and flour are added gradually to the rice, ensuring a smooth batter. The fritters are then deep-fried in vegetable oil and drained on paper towels. While still warm, they are rolled in sugar. This sweet treat is irresistible and perfect for sharing during Carnival.

Instructions
- 1. Bring the milk to a boil with half of the sugar, the butter, and the raisins.
- 2. Cook the rice in the milk until completely absorbed.
- 3. Let the rice cool down.
- 4. Add the beaten eggs, the liquor, and, gradually to avoid lumps, the flour.
- 5. Fry the fritters in plenty of vegetable oil.
- 6. Dry the fritters on paper towels.
- 7. While still warm, roll them in sugar.
