Broccoli Meatballs
Instructions
- 1. Boil the broccoli in salted water for about 10 minutes, until soft. Drain well and let them cool.
- 2. Once cool, blend the broccoli until smooth.
- 3. In a bowl, mix the blended broccoli with the egg yolks, breadcrumbs, diced egg whites, salt, and pepper. Mix well until smooth.
- 4. Take small portions of the mixture and form them into meatballs with your hands. Place them on a plate.
- 5. Steam the meatballs for about 10 minutes, until well cooked.
- 6. Meanwhile, in a pan, heat 6 tablespoons of olive oil.
- 7. Add the crushed garlic cloves and the chopped chili pepper to the pan. Cook for a few minutes, until the garlic is golden.
- 8. Add the anchovy fillets in oil to the pan and cook until they have melted well.
- 9. Strain the hot oil from the pan and pour it over the meatballs arranged on the serving plate.
- 10. Serve the hot broccoli meatballs and enjoy them immediately.
Notes
Add some grated cheese to the meatball mixture for an extra flavor.
